Kaki Fruit (Persimmon) Conundrum

As you probably know, these are the orangey-red baubles you see adorning bare trees in winter. I've always admired them for adding a splash of colour and for hanging on when all the leaves have gone. Now a neighbour has given me some and I haven't a clue what to do with them! Was thinking of making a jelly, as comments in online recipes suggest they can be fibrous if not totally ripe. Have any of you got a winning recipe for me please?
