No Cook Chocolate Tart for Valentine's Day from Mary Cadogan

Just perfect for Valentine’s day: No-cook and just the right chocolate hit for Valentine’s Day, plus leftovers!

No-cook chocolate tart



Serves 8-10

Making this dessert using half milk and half dark chocolate means it will appeal to everyone. A couple of tablespoons of kahlua or cointreau added to the filling is always a good thing.



200g pack all butter biscuits

100g butter

1 tbsp golden syrup or honey

100g bar dark chocolate

100g bar milk chocolate

200ml whipping cream

1 tsp vanilla extract

2 tbsp icing sugar

2-3 tbsp crème fraiche, to decorate

150g raspberries



1 Crush the biscuits (put them in a large strong plastic food bag and bash with a rolling pin). Melt the butter with the syrup in the microwave and stir in the biscuits. Press into a 36 cm x 12cm tranche tin (or 23-25cm round flan tin). Chill while you make the filling.

2 Break up the two chocolates and put in a large bowl. Melt the chocolate in the microwave for 2-3 mins on medium, stirring halfway through. Stir in the vanilla, sift in the icing sugar. Whip the cream until it just hold its shape, then fold into the melted chocolate. Pour into the prepared tin and smooth the top. Chill for at least 2 hours, or for up to 2 days.

3 Just before serving remove the tart from the tin and slide it onto a flat plate. You will find it easier to remove the tart if you leave it at room temperature for half an hour, then loosen the edges with the tip of a small pointed knife. Put teaspoonsful of crème fraiche along the centre of the tart and top each with a raspberry. Dust lightly with icing sugar and serve cut into thin slices with extra raspberries.
