Before I go forking out to notaires and the like, does anyone know if there is an equivalent to Restrictive Covenants, in particular when selling land to restrict where it can be built on (in order to preserve our view)

Yes, there is such a thing as "clause de vente" and "servitude" and you can make it clear in the "acte de vente" that your view must not be obstructed by stipulating a maximum height, width, depth of construction.
