Having read that article… I understand why we are starting to see packets of ham in the supermarkets… marked as “no nitrates” (or the equivalent sort of wording)…

Bacon has been off our menu for a long time, but a nice local product… ham on the bone… mmmm that does go down a treat… smoked locally… very tasty.

The sangliers made a full assault on chez nous last week and in a fit of pique I, who normally wouldn’t hurt any living creature, did some research on how to get rid of them, permanently. I discovered there’s a wild boar epidemic in the US and Australia and a poison called “Hog-Gone” (of all things) has been developed using… ta da… nitrates. It seems if you can get them to eat enough nitrates, after a couple of hours it affects their blood’s ability to transport oxygen. They get a bit sleepy, lie down and never get up.
