Last week’s newsletter featured information about the New Zealand Tea Tree, Manuka.

But let me explain a bit about this wonder honey and what it is supposed to do apart from tasting wonderful...
In 1981 Dr. Peter Molan, Senior Lecturer at the Biochemistry Department, Waikato University New Zealand, discovered that certain types of Manuka honey contained much higher antibacterial activity levels than regular honey.
Not knowing which substance is responsible for this unique type of activity he named it the Unique Manuka Factor (UMF).
Until 2006 when Professor Thomas Henle, Head of Food Chemistry, University of Dresden, Germany announced the discovery of methylglyoxal (MGO).
"We unambiguously demonstrated for the first time that methylglyoxal is directly responsible for the anti-bacterial activity of Manuka honey"
From the Waikato Honey Research Website: It is now known that this unique antibacterial activity is due to the combined action of methylglyoxal (MGO) and an unidentified synergistic component(s). Although very low levels of MGO are found in most honey, the high level of MGO in Manuka honey is unique, as is the presence of the synergist which more than doubles the antibacterial activity of MGO.
The MGO system was developed after Dr. Henle discovered the existence of Methylgyoxal. Manuka honey with an UMF rating of 10 can be compared with MGO 100 Manuka honey.

The honey available at Zone Bébé is imported from New Zealand by Comptoirs&Compagnies and it its UMF is 20+ at 36€ for a 250g jar.
Please be aware that honey should not be given to babies under 1 year old, because of honey can, very occasionally, contain a spore of a bacterium called clostridium botulinum. This can cause a rare form of food poisoning (botulism) in babies.
