Try Grand Frais for well aged beef, up to 40 day, it will cost you mind.
That’s not well aged!! Just normal outside France. Well aged to me is 45 days +++
My geography is not good but if your near Gers you might try Grasspunk.com.
Their Beef is grass fed and their Chicken is also outdoor raised in Chicken Tractors and although not being raised in Bresse they do raise Bresse chicken.
