I don’t know where you are based but if there is a Brico dépôt near to your house, you may find their catalogue useful since you will see what you need pictorially with it’s French title. There are other “sheds” too who will have online catalogues.

Sheetrock is indeed Placo and mudding as far as I recall is jointing and after, plastering, something that is harder to find in France

Thanks for all the replies everyone. I am fully aware of the metric system and use it all the time. I’ve lived in France for almost 4 years. I know I Know I should have learned a lot more French by now but like I said all my work is remote and done in English, Covid and having a baby took away the social parts. Another issue is the current contractor isn’t French. He was highly recommended by my wife friends, but even my wife is having trouble with communicating.
So that makes it a common practice France wide then? Perhaps your maçon does, but most people would use a 'un spécialiste, namely a plaquiste.

Fret not - you’ve had other things on your mind and Covid cut the socialising. We know, we’ve lost lots of vocabulary over the last 2 years - just be grateful you are young and not trying to recover from this in your 70s. 
Maybe now is the spur to learning - this matters to you. Perhaps I’m misunderstanding, is your wife French by any chance? If so, all too easy to leave it to her. Can you tape your conversations with him and then play them back later? Shame to ditch him if he is highly recommended.
