We regularly have Chicken caesar salad with little roast potatoes, Roquefort walnut and pear salad, Salad chevre chaud, coronation chicken salad sometimes with mango or peach mixed in it. Hope this helps.

Black-eyed pea salad with fennel and mint
3 cups black eyed peas (canned or prepared from dry)
Grind .5 tsp fennel, .5tsp cayenne, and .5 tsp black pepper. Toss peas in this.
Add 2 tsp honey, 6 tsp olive oil, 8 tbsp orange juice (or juice of two limes but OJ would be my first choice), and salt to taste. Toss again.
Blend with chopped fresh mint leaves (1 good handful or 1 cup lightly packed) If possible, refrigerate overnight.
(Pairs perfectly with a grilled provolone sandwich.)
Reminds me, I’ve been using a Greek salad dressing recently:
140ml fresh-squeezed lemon juice (about 4 lemons)
180ml extra-virgin olive oil
1 tsp dried oregano
1 small garlic clove
¾ tsp salt
¼ tsp ground pepper
I wanted a Waldorf salad but was fresh out of Waldorfs.
Today we had rice salad - Ben’s rice (it’s already cooked), sweetcorn, beansprouts, toasted cashews, shredded cabbage, grated carrot, salted peanuts, lime juice, sesame oil, soy sauce and fresh coriander.

A couple more suggestions from me:
When I grew courgettes I used to take the really baby ones and strip them vertically using a potato peeler, and the raw coils of tiny courgettes were very tasty on top of a salad.
Again, growing French beans, I’d take about 20-30 small ones, lightly boil them, so they still were a little bit crunchy, drain them, pour olive oil over them, crush a garlic on top, salt, black pepper and then lightly sauté them - tip them on top of a salad.

Broad beans/bacon (lardons) and blueberries (I’d de-skin the beans - laborious but worth it)
Labneh (strained yoghurt “cheese”) watercress and raspberries (Don’t see watercress many places - maybe Grand Frais?)
I haven’t been to Grand Frais recently but they often have watercress. Sometimes it’s bunches, otherwise it’s quite a large carton.
