Phaidon publishes new paella cookbook

Alberto Herraiz, the Michelin-starred fourth generation restaurateur and owner of Fogon restaurant in Paris, has written a book all about Paella. Published by Phaidon on 1st June, Paella is a home-cooking manual for Spain’s best-loved dish and contains recipes for all sorts of paellas from rustic rabbit with sherry to refined white truffle with wild asparagus. There are instructions for paella cooked on a barbeque and sweet paella cooked as a desert as well as recipes for traditional sauces and accompaniments.
Also new from Phaidon is Vegetables from an Italian Garden, featuring more than 400 authentic, new and delicious vegetable recipes from the famous Silver Spoon Kitchen.
