Hello! I am three weeks into my long-stay and really like the Airbnb apartment I reserved for the first three months per the VLS requirement. Is there any rule that states that I cannot continue to live here as long as I switch to a permanent housing rental agreement? Thanks!

From a visa point of view, it’s okay.
But you may find your landlord is unwilling, since - as far as I remember - an extended stay such as you propose is will create a different sort of tenancy, in which the tenant gains rights an Airbnb proprietor is unlikely to want to allow.
How about moving out of the airbnb for 1 week to ‘break the tenancy; - and then return for X number of weeks ? !!
Nope. They can’t re-rent to same person within a certain timescale (longer than a week).
If the landlord is prepared to do that then it would be possible. However it can require the landlord to have a different structure, tax regime, and legally to put utilities and property tax into your name. And you gain rights as a tenant which you don’t have currently.
They would also want to charge you a lot more than you have been paying for your winter let.
Personally as a landlord I wouldn’t touch it. I
