Our fig trees are heaving! I usually freeze a few kg to use with flow cooked pork in the winter. We don’t like fig jam. Can I use instead of mango in mango chutney? Dh likes dried figs I accidentally picked up in Grand Frsis, he anyone tried making them?
We have a fig tree too and it’s done well this year.
They’re nice fresh with fromage blanc or cheese. Or baked with honey or goat’s cheese or in tarte Tatin.
Not sure there will be any left on ours by the time we get there in early September ![]()
I am sure the wasps and hornets would have had them…
I posted elsewhere about the recipe “find” I had from Rick Stein of halved figs with Fromage frais/blanc that has added vanilla pod seeds. Gorgeous it was.
Also, I’ve just been lent a cake cookery book and there’s and interesting one for cake with baked figs and orange… I’m going to give it a go.
Why not freeze all you can get, @toryroo and then try a series of things with them. Should be fun! (If you have time…)
There is a total lack of either wasps or hornets in my garden this year. There are a couple of plum trees that have produced more fruit this summer than in the previous 30 summers put together and there has been a carpet of fruit under them every day for the past month. I expected the fruit to be a wasp magnet but I haven’t seen any, not one.
Very lucky and of course you can make amazing chutney with them. Same technique as all chutneys.
Send me some because all or our fig trees are wild and don’t produce.
I have never in 26 years seen such a glut of fruit as this year. Plums breaking branches they are so heavy Apples too. Don’t know what to do with them, usually take boxes up to roadside and they get taken. Wasps and hornets galore feasting on fallen fruits. Garden looks v sad at the moment. Trees shedding leaves at a rate of knots. My lawns are like straw. Managing to keep some stuff alive. My rudbekia have been in bloom for several weeks now. Normally start in Sept. Don’t like it at all. As they say here…c’est pas normale
Make loads of chutney and eat it and give it away for pressies!!
Everyone loves it especially if you put some sneaky chillies in the mix

That pizza restaurant in the UK served cooked baby figs with mascarpone . The figs were spiced a little.
Pizza Express, I think.
ISTR figs go well with goats’ cheese. And with a drop of dark rum peppered over them or in any creamy dollop you put on them.
And of course syrùp of figs as used to be available in Boots is made from … figs.
We have two healthy looking fig trees with loads of tiny figs which are giving no signs of ripening. Why? Is it lack of water?
Could be… and/or they could be in “waiting” mode and will ripen later or next yeareven.
Back in UK our fig tree had tiny figs formed in year 1 and then delicious fruit in year 2.
Are your figs tiny ??? or normal size but “not ripe”??
You can dry them by spreading them out in the sun on something they won’t stick to and then covering them with a cloth so the wasps don’t get them. Leave them a couple of days, when they look tight they are right, they will go flat. I used to get fantastic semi dried figs of the roof of my van ![]()
Purely my personal preference, but I don’t use honey IN cooking, I’ll add it afterwards (off the heat) ![]()
I read somewhere that heat can remove/alter much of the goodness of Honey and it’s become a habit to keep it on the cool side ![]()
With the recipe posted the honey deliciously caramelises a bit and the vinegar balances any “burnt” taste. I must confess I do add a final drizzle of fresh honey before serving.
Good heavens… I sometimes get a burnt taste if I forget there is some apple simmering on the stove… useful to think balsamic vinegar might ensure OH doesn’t notice

They were half the normal size but we’re now getting a steady supply of ripe fruit. So maybe it was a lack of rain or just being a young tree as so far they’ve always become ripe in September. Our next job is to find out when to prune as it’s too big and leggy
