Somewhere thats open in October.
Tough one. Stayed in Dunkirk for work on the seafront promenade back in November last year, and not all of the restaurants were open. It was made more complicated by the search for vegetarian food, rather than just meat or fish/molluscs.

Yes trying to find one that can also do something vegetarian for my wife. I remember on Masterchef Monica Galetti saying any chef who cant cook an omlette cannot call themselves a chef. Around us you ask for an omlette and its a non.
I started looking through trust pilot but often they are reviewers with an axe to grind or something else. So far Dunkirk seems to have more on offer but still pretty poor.
I might have told this before but we had some vegetarians on our annual motorcycle trip to France and the hotelier assured us that they could deal with that for meals.
First night, the vegetarian dish pops out and it’s asparagus wrapped in ham, presumably on the basis that ham isn’t really proper meat.

I don’t remember any that I personally stopped at, I used to get down the road a bit to Hautvillers-Ouville (excellent but now long closed sadly) or Abbeville, very good and as far as I know still live and kicking.
A look in my 2015 Guide des Relais Routiers tells me that there is one called Aux Amis de la Route, it is on the rue des Mouettes in the ZI des Dunes. Never been there so unable to recommend and I think that the one highlighted by @robwebber above is your best bet.
Edit: The above mentioned Aux Amis is about 2 minutes from Calais ferry terminal. Forgot to mention that.

In the end we ate at the hotel we were staying in, the Radisson Blue, as they had vegetarian offerings. We looked in pretty much every restaurant up and down the promenade, and either they were closed, or didn’t do vegetarian food. This was mid-November.
Edit: FYI the restaurant and even bar menu are open to non residents.

I suppose an hotel chain catering for international guests is likely to be better at vegetarian than most French restaurants.

Many years ago when my son was still a veggie we delivered Fran to a hospital appointment only to discover that she was booked in for a few days. So the 2 of us returned home and stopped at a routier resto on the N21 north of Perigueux.
We mentioned to the management that he was a veggie and without comment or demur they produced a suitable meal just for him. The same happened at our local bar in the same era. The late and very dear to us Paulette also went to a lot of trouble to prepare something suitable.
Thus I have never held to the view that it was meat or nothing in Fance. 
Then dont come anwhere near Tours. The number of restaurants we visited with friends where new owners (previously staff) have taken over and standards have gone through the floor. Many only serving evenings now. When you have a restuarant that required booking a table a week in advance that within about 4 months is now empty of the regular clientelle how could such a coq up occur so quickly?
That seems to be one of those all you can eat places. Only ever went twice to one of those and the second time only because it was chosen as a venue for my nephews birthday. The food there is mainly prepared in advance and I thought unappetising as it wasn’t fresh. I would never go again to a place like that.
I usually frequent the grill area which is all fresh meat and veg cooked for you as you like.
Yes, that’s what I did the second time but I still wasn’t impressed. All the meat was pre cut and prepared so you weren’t sure how long it had been there.
Pre cut steak? How is that different to any other restaurant high end or low?
I was thinking more of pre cut meat for stir fries etc, taken from a large container with perhaps several kilos of it. Also the pre cut vegetables in large containers. It may be similar in some restaurants but it looked like a whole days worth of meat and veg and put me off.
