Lemon Drizzle Cake

I love cakes that can be made quickly.
This is a great example of the ever popular lemon drizzle cake.

115g softened butter
175g sifted self raising flour
175g sugar
2 eggs
4tbsp. milk
rind and juice of 1 lemon
3 tbsp. sifted icing sugar

1. Line and grease a one pound loaf tin
2. Pre heat oven to 180 degrees c.
3. Add all the ingredients except half of the lemon juice and icing sugar to a large bowl and beat well for 2 minutes
4. Pour the mixture into the loaf tin and make a small dip in the centre of the mix.
5. Bake for 45 mins
6. To make the icing, mix the rest of the lemon juice and icing sugar to a smooth paste.
7. Pour over the cooled cake.
8. Serve and enjoy!

Depending on the size of the lemon, you may need a bit more lemon juice for the icing.
