Don’t want to throw water on your fire, but if you want to set up in restoration, you need to find the places where you will get the clients and not stuck out in the middle of nowhere no matter how attractive it seems so research into running a business in France and all the social payments you will have to make is a priority before you start out. Have seen so many once thriving establishments go to the wall in recent years due to dwindling clients with less money to spend on eating out and charges ever increasing. Also check its not a flood area too!
