Stem Ginger recipe

When we first came to France I found it difficult to find stem ginger so since then I have been making my own because it is so easy. Use the freshest ginger you can find and avoid any sorry dried up pieces.

I use the ginger finely sliced in salads (and many other dishes) and the syrup in Chinese inspired dishes.

I drizzle it over sliced melon - delicious.
