Be stingy, leave leave France on EU Passport, enter and leave (UK) on UK passport and enter France on EU Passport.

You use the passport of border guard facing you. So leave France with french or EU passport, arrive in Uk with britiish one. Then reverse on way back.

You leave and enter the country with its passport, if you have it. So on your UK trip from France you leave France with your French passport, enter and leave the UK with your UK passport and return to France with the French one.

No problem with Irish/UK passports I can use either.
However, airlines may cause problems!
