Oh really? Of course it is logical - I just haven’t come across it. But if I cook pork it tends to be a whole shoulder over 7 or 8 hours in the oven, les enfants aren’t big fans of other bits.

Now that I might enjoy. I have tried pieds de porc - bought from our local traiteur. decided it was a waste of time and money.

Your method means the bones can be eaten as well - so definitely worth a go if I see any on offer. :wink:
